Pasqua Rosato Puglia is a 12% ABV rosé wine from the Capitoli range of the Pasqua family of Verona, made under the Puglia IGT classification from a blend of 60% Primitivo and 40% Sangiovese. The grapes come from vineyards around Taranto and Brindisi in Puglia, southern Italy.
How is it made?
The juice of the pressed grapes is separated from the skins immediately, so the wine keeps its pale, delicate colour. Fermentation is carried out with selected yeasts at 16–18°C, and this controlled temperature brings out the fruity aromas. The wine is rested in stainless steel tanks and matured in bottle; harvest takes place in mid-September. According to the technical sheet, total acidity is 6.4g per litre and residual sugar is around 6g. The Capitoli range brings together well-known grape and vineyard areas from the south to the north of Italy with the Pasqua family's winemaking tradition.
What does Pasqua Rosato Puglia taste like?
It has a delicate cherry-pink colour. Fresh sour cherry and cherry aromas are prominent on the nose. On the palate it is balanced and medium-bodied, with a lively structure and a slight sense of warmth drawing attention.
How should it be served, and what does it pair with?
The producer recommends serving it cool, at around 12°C. It pairs well with starter platters, pasta, baked fish or white meats, and it is also a comfortable choice for meze tables.
