White wine is made by separating the juice from the grape skins early and fermenting it; it's pale in colour and usually has lively acidity. For white wine, the grapes are crushed and pressed, then the juice is separated from the skins and fermented without them. So the colour ranges from pale straw to gold, and there's almost no tannin. What really shapes the character is the grape variety and the producer's choices: wines fermented in stainless steel tanks stay fresh and fruity, while those rested in oak casks take on a rounder, vanilla-tinged, creamy texture.
A fairly neutral grape on its own, Chardonnay readily takes on the mark of its region and winemaking; that's why there are both light, mineral examples and oaky, full-bodied ones. Cloudy Bay Chardonnay from New Zealand is one of the examples on our shelves.
Known for its high acidity and distinctive aroma: in cool regions, grass and citrus notes come through; in warm regions, tropical fruit and peach. It's usually made without oak and drunk young. Andes Sauvignon Blanc is a good start for tasting this lively style.
Pinot Grigio, the Italian name for the Pinot Gris grape, is mostly made in Italy as a light-bodied, pale, crisp wine. Soave, from around Verona, is likewise a light, easy-drinking white; Pasqua Soave is an example of the style.
Riesling, Germany's emblem, is a floral, high-acid grape that can be made in styles from dry to sweet; Dr. Loosen Dr. L Riesling Dry is a dry example. Wines from the Misket (Muscat) family stand out for the grape's distinctive floral scent; the shelf has both dry and medium-sweet examples.
Bottles such as Suvla Kınalı Yapıncak, made from Thrace's local Kınalı Yapıncak grape, and Kavaklıdere's Çankaya reflect Turkey's white wine tradition. Cyprus's own local white grape is Xynisteri.

Light and medium-bodied white wines are best at 7–10 °C, full-bodied oak-aged whites at 10–13 °C. A bottle straight from the fridge is usually below these temperatures; taking it out shortly before serving helps the aromas open up.

Cyprus's best-known local white grape is Xynisteri. It's one of the island's traditional grapes and, together with Mavro, can be used to make the famous sweet wine Commandaria. The island also has less widely grown local white varieties such as Promara and Spourtiko.
