Pasqua Shiraz Organic is a 13% ABV organic red wine from the Capitoli series of Verona-based Pasqua, made from 80% Nero d'Avola and 20% Shiraz grapes grown in organic vineyards in western Sicily, originating from Sicilia DOC. The wine is produced from certified organically farmed grapes.
It is deep ruby in colour with purple reflections. The nose is intense; fruit notes such as blackberry and plum are joined by cinnamon and clove spice. The palate has an appealing texture, with soft, velvety tannins; the drink is balanced and persistent.
Because the vineyards sit at different altitudes, harvest is spread over up to four weeks, and the grapes are picked at full ripeness. The two grapes are fermented separately at controlled temperature with 15–20 days of skin maceration, and blended between late January and February. Malolactic fermentation and a subsequent 3–4-month rest take place in stainless steel tanks, so fruit character leads rather than oak.
The producer recommends serving at 16–18°C. It pairs well with red meats and mature, spiced cheeses; grilled steak and roast lamb are also natural accompaniments.
