Pasqua Prosecco is an 11% ABV Prosecco DOC Treviso Extra Dry sparkling wine made by Verona-based Pasqua Vigneti e Cantine from Glera, the local grape of the Treviso region. The Extra Dry class means a slightly softer, fruitier drink than brut.
It is bright straw yellow in the glass with light greenish reflections. The nose is gently floral; peach, pear and tropical-fruit notes come together. The palate offers a lightly off-dry, refreshing, easy-drinking structure. Glera's lively fruit character leads, and the bubbles lighten the drink.
Glera is a grape native to Veneto's Treviso region and forms the basis of Prosecco. According to the producer, the soils and climate of this region offer favourable conditions for lively, youthful sparkling wines. The DOC Treviso designation indicates that the grapes come from this sub-region.
It is served well chilled in a flute glass; it can be used as an aperitif or as a sparkling base in cocktails. White-fleshed fish, and seafood such as prawns and mussels, and green salads are good pairings. Its lightly off-dry character also suits fruity desserts and citrus cakes.
