Filipetti Prosecco Extra Dry is an 11% ABV Prosecco DOC sparkling wine made by the Filipetti brand, part of Asti-based Perlino, from Glera grapes. The extra dry style offers a slightly softer, fruitier drink than brut. Prosecco DOC wines are produced in an area covering the Veneto and Friuli-Venezia Giulia regions of north-east Italy.
How is it made?
The grapes are pressed and the must is separated from the skins within 48 hours. The second fermentation is carried out under controlled conditions at 18–19°C in pressurised, sealed tanks; this method brings out aromatic, fruity notes. The wine then rests on its yeast lees for at least 30 days. It contains around 15 grams of sugar per litre.
What does Filipetti Prosecco Extra Dry taste like?
It has a straw-yellow colour with greenish reflections and fine, persistent bubbles. Fresh, intense aromatic notes are felt on the nose. The palate is balanced and delicate, finishing pleasantly.
How should it be served, and what does it pair with?
The producer recommends serving at 6–8°C. It is excellent as an aperitif; it pairs well with meze, fish dishes and light plates. The Filipetti brand was founded in 1922 and has been part of Perlino since the 1990s.
