Sarafin Chardonnay is a 14% ABV white wine from Doluca's Sarafin range, made with Chardonnay grapes from vineyards in Thrace's Saros region. Doluca, run by the Kutman family for three generations, is one of Turkey's long-established private wine producers.
After the grapes are gently pressed, the must is fermented on its lees in small French oak barrels, a method known as "sur lie". This is followed by malolactic fermentation, a process usually applied to red wines. This gives the wine its buttery character and velvety softness.
Hints of tropical fruit and crisp citrus notes are to the fore. On the palate, a creamy, buttery, velvety texture is felt, coming from contact with barrel and lees. Its high alcohol and oak influence make it a full-bodied Chardonnay.
It is best served not too cold, at around 10–12°C, to let its aromas open up. It pairs well with rich-textured dishes such as chicken in cream sauce, baked fish and seafood, and mature cheeses; pasta with buttery sauces is also a good accompaniment. Letting it rest briefly in the glass after opening helps the aromas from the barrel to open up.
