Savalan Chardonnay is a dry white wine made entirely from Chardonnay grapes by Savalan Aspi Winery, located in Gabala at the foot of the Caucasus in Azerbaijan. The producer gives an alcohol content of 12.5%; the wine is described by its pale straw-yellow colour with golden glints.
The must is fermented with selected yeasts for 10-12 days without skin contact; fermentation temperature is kept at a maximum of 16°C. Maturation takes place in stainless steel tanks, so the wine has no oak influence and fruit character comes to the fore. Savalan Chardonnay's 2014 vintage received a commendation at the Decanter World Wine Awards 2015.
It's a bright, fresh white. On the nose, a rich bouquet of ripe tropical fruits is detectable; on the palate, a distinct, lively acidity stands out. The finish leaves a pleasant, nutty taste.
The producer recommends serving it at 10-12°C. It's a recommended accompaniment for white meat, seafood and fish dishes; it strikes a balanced match with dishes such as grilled chicken, baked sea bass or prawn casserole. Savalan also showcases its wines at its tasting centre in Baku.
