Sarafin Sauvignon Blanc

Sarafin Sauvignon Blanc is a dry white wine from Doluca's Sarafin range, made with Sauvignon Blanc grapes from vineyards on the shores of the Saros Gulf in Thrace. The producer states that this Bordeaux-origin variety has gained a distinctive character by adapting to the terroir of the Saros peninsula.

How is it made?

Transporting the grapes to Doluca's facilities in refrigerated trucks straight after harvest, to preserve their freshness, is a known feature of Sarafin Sauvignon Blanc. Cold fermentation is applied at the winery; the aim is to carry the variety's lively, fresh structure through to the bottle as it is. Fruit and herbal character take precedence over cask influence.

What does Sarafin Sauvignon Blanc taste like?

On the nose, aromas ranging from green apple and greengage to fresh green herbs are detectable. On the palate it offers a lively, refreshing and crisp structure; its acidity keeps the wine light and cooling. On the finish, citrus and herbal freshness are prominent.

How is it served, and which foods does it pair with?

It's suitable served chilled to 8-10°C. It pairs well with green salads, fresh cheeses such as goat's cheese, grilled fish and seafood, and herb-scented meze in olive oil. It can also be chosen on its own as an aperitif.
