Sarafin Merlot is a 14.5% ABV dry red wine made by Doluca from Merlot grapes grown in vineyards in the Saros region of Thrace. Doluca, run by the Kutman family for three generations, is one of Turkey's oldest private wine producers; its production facility is in the Çerkezköy district of Tekirdağ.
Merlot, originally from Bordeaux, has adapted well to Saros's climate: light sea breezes cool the vineyards, allowing the grapes to stay on the vine longer and develop a soft, fruity character. Cherry, blackberry and fleshy plum stand out on the nose, joined by vanilla, mocha and spice. The palate is rich and velvety, with touches of bitter chocolate, roasted coffee and a light earthiness and wild herbs. The finish is long and harmonious, with fruit and warm spice lingering. The wine is aged for 12 months in 225-litre French oak barrels.
It is recommended to serve at 16–18°C and decant around 30 minutes before drinking. Stored under suitable conditions, it can be kept for 6–7 years from the vintage.
Its velvety structure pairs well with grilled red meats, sauced pasta and mature cheeses.
