Sarafin Cabernet Sauvignon is a 14.5% ABV full-bodied dry red wine made by Doluca from Cabernet Sauvignon grapes grown in its vineyards near the Saros Gulf in Thrace. Doluca, run by the Kutman family for three generations, is one of Turkey's oldest private wine producers; its production facility is in the Çerkezköy district of Tekirdağ.
Thanks to the cool summer winds blowing off Saros, the grapes are harvested relatively late. Blackberry, cassis and black cherry stand out on the nose, joined by vanilla, chocolate and light toasted-oak notes. On the palate, black fruit meets touches of sweet spice, tobacco and cocoa. It is a full-bodied wine with firm yet soft tannins and a rich mid-palate; the finish is warm and long. Cabernet Sauvignon's pronounced tannic structure is softened through ageing in 225-litre French oak barrels.
It is recommended to serve at 16–18°C and decant around 30 minutes before drinking. Stored under suitable conditions, it has an ageing potential of 7–8 years from the vintage.
Its firm structure is best balanced by grilled red meats, lamb dishes and mature cheeses.
