Crafter's Wild Forest is a 47% ABV forest gin made by Estonia's Liviko in Tallinn. It is inspired by Estonia's untouched coastal coniferous forests. At the heart of the recipe is a trio of juniper, spruce needle and pine shoot; late-summer heather and bilberry shoots add a fruity, floral touch. The producer calls this recipe "No. 27" and emphasises that the juniper is distilled using sustainable methods.
Spruce, juniper and citrus dominate the nose; the first impression recalls fresh forest air. On the palate, a dry, sharp structure with spicy juniper and herbal notes is felt; heather and bilberry shoots lightly soften this resinous line. A light salty, smoky trace lingers on the finish. The high alcohol content keeps the aromas distinct even in mixed drinks.
The producer recommends serving it in a glass full of ice with about 4 cl of gin and 20 cl of tonic, garnished with a lightly charred bay leaf. It also forms a robust base in cocktails such as Sour, Paloma and White Negroni.
Its resinous, herbal, lightly smoky character strikes a good balance with grilled fish and seafood, embered meats and mature cheeses.
