Redbreast 12 Year Old is a 12-year-matured, 40% ABV single pot still Irish whiskey produced at the Midleton Distillery by Irish Distillers (Pernod Ricard). It is regarded as one of the best-known representatives of the single pot still style.
What does single pot still mean?
Single pot still is a style of whiskey unique to Ireland: the mash is a mix of malted and unmalted barley, distilled at a single distillery in copper pot stills. Redbreast 12 is made by triple-distilling this mix in copper pot stills, a method that gives an oily, full and spicy texture. The whiskey matures for 12 years in a combination of bourbon and sherry casks.
What does Redbreast 12 taste like?
The nose is complex, spicy and fruity, with toasted wood notes; hints of linseed, hazelnut and cake accompany it. The palate is full, silky and layered; spice, fruit, sherry and toasted notes are balanced, with ginger cake and dried fruit standing out. The finish is long, with the aromas lingering on the palate.
How should it be served, and what food does it pair with?
It can be enjoyed neat or with a few drops of water, and on ice if preferred; it is also used in classic cocktails such as the Old Fashioned. Its rich, sherried character pairs well with mature cheeses, lamb dishes and dried-fruit or chocolate desserts.
