What is London Dry gin?

London Dry is not a city but a production rule. In this style, all botanical flavours are imparted to the alcohol during distillation; after distillation, nothing beyond water and a very small amount of sugar is added, with no colouring or flavouring. Juniper berry always takes the lead role; it is usually accompanied by botanicals such as coriander seed, citrus peels and angelica root. The result is a dry, clean drink with a pine-like character.
