TopHat uses fresh lemon rather than dried peel for its citrus character, saying this avoids any bitter or metallic notes dried peel can bring. What does Top Hat Gin taste like?

On the nose, pine-tinged juniper, light lemon and lavender are felt alongside delicate violet tones. On the palate juniper and coriander come to the fore, followed by the warmth of sage and a light sweetness balanced by citrus. The finish extends with liquorice root, coarsely ground black pepper and light spice.
