The Irishman The Harvest is a 40% ABV blended Irish whiskey created by Walsh Whiskey (Amber Beverage Group) from 70% single malt and 30% single pot still whiskey. It was the brand's first product, launched in 2007 as Founder's Reserve; it was renamed "The Harvest" with new packaging in 2022.
How is it made?
The Harvest's blend contains no grain whiskey, setting it apart among Irish blends. Walsh Whiskey sources its components through long-term agreements: the single malt comes from Bushmills, the single pot still from Midleton. The whiskey is triple-distilled, matures solely in American oak ex-bourbon casks, and carries no age statement. Its new name emphasises the role of agriculture and harvest in whiskey production.
What does The Irishman The Harvest taste like?
The nose shows white and black pepper, green apple, pear, lively spice, citrus and peach. The palate offers ripe fruit, vanilla, butterscotch and caramel; cracked black pepper, nutmeg, clove and dark chocolate stand out alongside pot still spice. The finish leaves oak and butterscotch.
How should it be served, and what food does it pair with?
It can be enjoyed neat, on ice or with a few drops of water; it also suits everyday sipping at the table. Its spicy, fruity character pairs well with chicken, grilled meats and mature cheeses.

- Store in a cool, dry place away from direct sunlight.
- Keep wine bottles on their side and spirits upright.
- Serve white/rosé and sparkling wine at 6–12°C, and reds at 16–18°C.
- Keep opened bottles closed; drink wine within a few days of opening.
