The Irishman Caribbean Rum Cask Finish is a 46% ABV Irish whiskey from Carlow-based Walsh Whiskey (Amber Beverage Group). A combination of single malt and single pot still whiskeys, it receives a final maturation in rum casks from the Caribbean island of Saint Lucia; it is a limited-edition release.
How is it made?
A mash made entirely from Irish barley is triple-distilled. The whiskey first matures in American oak bourbon casks, then rests for about six months more in casks that held Saint Lucia's Chairman's Reserve rum. The rum cask adds tropical fruit and cane sugar sweetness to the classic Irishman character.
What does The Irishman Caribbean Cask taste like?
The nose shows rum, apricot, summer fruits, pineapple and ginger. The palate brings together tropical fruits such as mango, banana, pineapple and fig with lively spices like ginger, cinnamon, vanilla and white pepper. On the finish, tropical sweetness and spicy warmth linger for a long time alongside fig, banana and light oak.
How should it be served, and what food does it pair with?
Its tropical and spiced notes open up best when drunk at room temperature in a tulip-shaped glass, neat or with a few drops of water. It is a fitting companion to fruit desserts, chocolate desserts and spicy dishes.
