Talisker Wilder Seas

Talisker Wilder Seas is a limited-edition, 48.6% ABV single malt Scotch whisky produced by Diageo at the Talisker Distillery on the Isle of Skye in collaboration with the ocean conservation organisation Parley for the Oceans, finished in ex-cognac casks. Its full name is Talisker x Parley Wilder Seas.

What is the story behind Wilder Seas?

This bottling brings Talisker's coastal identity together with a collaboration focused on ocean conservation; Parley's work focuses on restoring underwater forests. The bottle is made entirely from recycled glass. The whisky is finished in French oak casks that previously held cognac, adding fruity depth to Talisker's maritime character.

What does Talisker Wilder Seas taste like?

The nose shows a tight-knit smoke, malt and fresh bread, brioche, dried fruit and salty sea air standing out; pepper, raisin, plum and hints of coffee are sensed behind them. The palate is distinctly peppery and raisined; sweet fruit, light smoke, citrus and the warmth of chilli pepper accompany Talisker's familiar maritime complexity.

How should it be served, and what food does it pair with?

Bottled at a relatively high 48.6% ABV, it is best tasted neat first, then opened up with a few drops of water. Its peppery, smoky character pairs well with grilled red meat, while its dried-fruit tones suit mature cheeses and dark chocolate.
