Talisker Surge is a no-age-statement, 45.8% ABV single malt Scotch whisky produced by Diageo at the Talisker Distillery on the Isle of Skye. According to the producer, it is the only Talisker matured in first-fill American ex-bourbon casks, and it was prepared for travel retail (airport shops).
What difference does a first-fill bourbon cask make?
Casks that have previously held bourbon only once give the whisky plenty of vanilla, caramel and honeyed sweetness. In Surge, this sweetness comes together with Talisker's familiar peppery spice and a smoke reminiscent of sweet barbecue wood. It won an award in a 2020 travel-retail competition.
What does Talisker Surge taste like?
The nose is sweet and smoky, opening with vanilla, toffee and crème brûlée notes, along with green apple, banana and light toasted nuts. The palate is creamy and full-bodied; intense smoke, honey and caramel are accompanied by brioche, banana and peach, with fresh ginger and Talisker's peppery spice added. The finish is long and intense, leaving black pepper, chilli and spicy smoke together with nuts and a light caramelised sweetness.
How should it be served, and what food does it pair with?
Drinking it neat at room temperature is recommended; a few drops of water bring out the sweet notes from the bourbon cask. Its sweet, smoky character pairs well with barbecued meats and grilled red meat, while its spicy structure suits mature cheeses.
