Maison Castel Merlot is a dry red wine produced from the IGP Pays d'Oc area of southern France under the Castel family's Maison Castel brand. The warm, dry summers of this region, spanning Aude, Hérault and Gard, allow Merlot grapes to ripen slowly on the vine.
What does Maison Castel Merlot taste like?
It is deep, dark ruby in colour. Red fruit and spice are felt on the nose. The palate is balanced and structured, finishing with a savoury, long finish. During production, traditionally made wine is blended with thermo-vinified wine, and the subsequent oak treatment gives the Merlot touches of chocolate, plum and light smoke. The sainee method is also used to boost aromatic intensity.
How should it be served?
The producer recommends serving at 14–16°C, slightly below room temperature. It is made for young drinking and is at its best within three years of bottling.
What food does it pair with?
It pairs well with barbecue and grill dishes, charcuterie platters and soft cheeses. The producer's suggested pairing, if desired, is beef fillet with shallots; grilled red meats are also a natural choice.
