Brewart Zivania Classic

Brewart Zivania Classic is a traditional Cypriot zivania from Brewart, a boutique brewery and distillery. Zivania is a grape spirit unique to the island, with a centuries-old history, made by distilling a mixture of grape pomace and dry wine from local grapes; Brewart also produces its zivania from local grapes, distilled in copper stills.

Where does Classic sit in the Brewart Zivania range?

Classic is the range's core expression. The other zivanias in the range are cask-rested: Gold matures for a year in oak, gaining vanilla and oak notes; Platinum rests for a year in red wine casks; and the limited-edition Commandaria expression is rested in casks that held Commandaria wine. The producer describes Classic as a grape carefully distilled in a copper still, carrying the flavour of the soil, air and water of Cyprus's vineyards.

How should it be served?

In Cyprus, zivania is traditionally served well chilled and drunk neat in small shot glasses. As it is a high-strength, unsweetened spirit, sipping it in small measures alongside light snacks is common practice on the island.

What food does it pair with?

In island tradition, zivania is served at the mezze table with cured meats and sausages, nuts and walnut-based desserts. Simple Cypriot mezze such as halloumi, olives and raw nuts pair well with Classic's clean grape character.
