Aperol is an orange-coloured Italian aperitif with 11% ABV, produced by Campari Group. Created in Padua in 1919 by brothers Luigi and Silvio Barbieri after seven years of experimentation, it was long produced by the Barbieri company. Today it is best known worldwide for the Aperol Spritz cocktail.
Its recipe includes bitter and sweet orange, rhubarb, cinchona bark, gentian, and selected herbs and roots. Pronounced orange aromas and a light herbal freshness lead on the nose. The palate balances sweetness and bitterness; citrus freshness is rounded out by fine botanical notes. Compared with Campari, it is sweeter and less than half the alcohol strength.
For a classic Aperol Spritz, Prosecco, Aperol and a little soda are added to a wine glass full of ice, garnished with an orange slice. It can also be used in cocktails such as Aperol Sour, or lengthened with tonic.
In keeping with Italian aperitivo tradition, it goes well with light snacks such as olives, sun-dried tomatoes and goat's cheese crostini. Its citrus character also pairs with light fish dishes and grilled vegetables.
