Wild Turkey 81 is a 40.5% ABV Kentucky straight bourbon whiskey produced in Kentucky by Wild Turkey distillery, part of the Campari Group. It is positioned as the softer, lower-proof sibling of the brand's iconic 101 bottling.
How is it produced?
Wild Turkey 81 was developed by the distillery's associate master distiller Eddie Russell, building on the legacy of his father Jimmy Russell, who served as the brand's master distiller for many years. Its mash bill has a high rye content, and the whiskey is matured in heavily charred oak casks. The aim is to preserve Wild Turkey's characteristic spiciness while offering an easier-drinking proof.
What does Wild Turkey 81 taste like?
On the nose, raisin, cinnamon, caramel popcorn and light black pepper are followed by sweet notes of vanilla, honey and caramelised banana. On the palate, spices such as clove and nutmeg enliven the honeyed fruit; it is not overly sweet, and spiced fruit stands out. On the finish, soft honey and vanilla are balanced by spice.
How should it be served, and what food does it pair with?
It can be enjoyed neat, on the rocks, or in long drinks made with the Old Fashioned, whisky sour, or cola or ginger ale. Its rye-derived spice and caramel sweetness pair well with barbecued food, grilled red meat and roasted nuts.
