Savalan Merlot is a 13.5% ABV dry red wine made entirely from Merlot grapes by Savalan – ASPI Winery in the Gabala region of Azerbaijan. The wine is aged in French oak. Alongside its wines, Savalan also produces spirits distilled from fruits such as cornelian cherry, pear and mulberry.
It has a rich, garnet-toned colour in the glass. It is an elegantly structured wine, with red fruit notes standing out. The finish is long, marked by spiced, woody flavours — a character that comes from the wine's ageing in French oak. The grapes are fermented on their skins with selected yeasts for seven days, with fermentation temperature not exceeding 25°C. Savalan Merlot's 2012 vintage won a silver medal at the 2019 Monde Selection competition in Brussels.
The producer recommends serving at 16–18°C. Serving it in a wide-bowled red wine glass, opened shortly before drinking, helps the aromas open up.
According to the producer's recommendation, it pairs well with meat dishes, cold cuts and charcuterie platters, mature cheeses and pasta. Grilled red meats and mature cheeses such as kaşar or tulum support the wine's spiced finish.
