Savalan Melody Semi Dry Red

Savalan Melody is a 14% ABV off-dry red wine produced by Savalan – ASPI Winery, based in the Gabala region of Azerbaijan. It is made from red grape varieties native to the Savalan Valley. The producer's winery is in Gabala, and its tasting centre is in Baku.

What does Savalan Melody taste like?

It is a deep ruby-coloured wine. The nose shows delicate notes of ripe red forest fruit and light spice. The palate combines a fine sweetness with a rich, full body; thanks to its off-dry style, the fruit is soft and the sweetness measured. The grapes are fermented on their skins with selected yeasts for seven days, with fermentation temperature not exceeding 25°C. The wine is aged in stainless steel tanks, so fruit character leads rather than oak.

How should it be served?

The producer recommends serving lightly chilled, at 12–14°C. It can also be served as an aperitif. Once opened, the bottle should be recorked and stored in the refrigerator.

What food does it pair with?

The producer's recommendations include roasted meats with vegetables, pilaf with dried fruit and chicken, mature cheeses and desserts. Chicken dishes and cheese boards make a particularly balanced pairing.
