Rémy Martin XO

Rémy Martin XO is a 40% ABV XO Fine Champagne Cognac blended by the Rémy Martin house, part of the Rémy Cointreau group, from hundreds of eaux-de-vie sourced from the Grande Champagne and Petite Champagne crus. The term "Fine Champagne" has nothing to do with sparkling wine; it shows that the blend comes only from these two chalky crus, with at least half from Grande Champagne. The house has worked exclusively with distillates from these two regions since 1948.

What does Rémy Martin XO taste like?

In this blend, considered the signature of the cellar master, the producer states there are up to 400 different eaux-de-vie; under XO rules, the youngest component has rested for at least ten years in oak. On the nose, floral and fruity aromas open like an explosion. On the palate there is a full progression from ripe plum and candied orange to spice and hazelnut; the finish reveals roasted cocoa bean and honeyed gingerbread. The producer sums up the profile as full-bodied, fruity and long on the finish.

How is it served?

The producer recommends XO neat, with ice, or in an Old Fashioned. Tasting it first neat at room temperature in a tulip-shaped glass is a good way to fully get to know its aromas.

What food does it pair with?

The cocoa and hazelnut notes pair well with bitter chocolate desserts and nuts, while the plum and orange notes make a good match with mature hard cheeses.
