Kavalan Solist Fino Sherry Cask is a single malt Taiwanese whisky from the Kavalan Distillery in Taiwan's Yilan region, bottled at cask strength from a single fino sherry cask. It is part of the Solist range, which gathers Kavalan's select single-cask bottlings.
About Kavalan and the Solist range
The Kavalan Distillery was founded in 2005 by T.T. Lee, founder of the King Car Group; it takes its name from Kavalan, the historic name for the Yilan region where the distillery is located. Taiwan's hot, humid climate accelerates maturation. In the Solist range, each bottle comes from a single cask, so its strength and character vary from cask to cask. Fino is one of the driest styles of sherry and gives a more delicate profile than the more common oloroso casks.
What does Kavalan Solist Fino taste like?
The nose shows dry sherry notes, nuts, grain and delicate spice; some bottles also show walnut, honey and yellow plum. The palate is powerful and structured: dry sherry character, nutty tones, plum, baking spices and a light peppery sharpness. The finish is long, dry and spicy, with oak notes lingering for a long time.
How should it be served, and what does it pair with?
As it is bottled at cask strength, it is recommended to try it neat first, then with a few drops of water. It makes a good match with mature hard cheeses and roasted nuts.
