Cavicchioli Lambrusco is a lightly sparkling wine made by Cavicchioli, which has produced Lambrusco since 1928 in San Prospero, in the Modena area of Italy's Emilia-Romagna region. Lambrusco is the name given to the local grape family of Modena and its surroundings, and to the sparkling wines made from these grapes.
Who is Cavicchioli?
The winery's story opens with Umberto Cavicchioli, who began making wine in 1928. In 1958 his son Piergiorgio built the winery in the middle of the family's farmland; by the 1970s Cavicchioli's Lambruscos had also expanded outside Italy. Production takes place in San Prospero, the traditional area for Lambrusco di Sorbara. The brand has been part of Gruppo Italiano Vini since 2011.
What kind of wine is Lambrusco?
Lambrusco is usually made frizzante, that is, lightly sparkling; while red versions are best known, rosé and white versions also exist. It comes in dry (secco), semi-dry (semisecco) and semi-sweet (amabile, dolce) options. Since most of these styles appear in Cavicchioli's range, refer to the bottle label for colour, sweetness and alcohol information.
What food does it pair with?
It is suitable to serve chilled (10–12°C). It is a classic pairing with the charcuterie and mature cheeses of Emilian cuisine, with pizza and pasta dishes, and at barbecue tables.
