Beylerbeyi Kalecik Karası is a 45% ABV heart-cut raki made by triple-distilling suma obtained solely from Kalecik Karası grapes with aniseed. It is produced at the Sarper Damıtımcılık facilities in Akhisar, Manisa; the producer states no sugar or agricultural ethyl alcohol is used. Kalecik Karası is a native red grape variety, taking its name from the Kalecik district of Ankara and typically used in red wine.
According to a Degustasyon.net tasting, the nose shows intense aniseed and fresh grape aromas. The palate is smooth; the fruitiness from the grape is pronounced, with light spiced tones characteristic of the red grape. It is described as a fresh, lively and easy-drinking raki that whitens well when water is added.
The producer recommends chilling to 2–4 °C, diluting with cold water, and adding ice afterwards. Adding water gradually, little by little, is a good way to preserve the fruity aroma. A narrow-waisted, traditional raki glass is the most common choice for this style of raki.
Tasters particularly recommend trying it with spiced mezes. The producer also highlights its pairing with Anatolian and Aegean mezes as well as fish and seafood.
