Grande Absente 69 is a 69% ABV, wormwood-forward, traditional-style French absinthe produced by Distilleries et Domaines de Provence in Provence. The producer describes it as a version with more wormwood herb and less sugar than Absente 55, giving it a pronounced bitterness. The aim is to come close to the intense herbal character of 19th-century French absinthes.
What does Grande Absente 69 taste like?
It is made with classic herbs led by wormwood, green anise and mint. The aromatic profile is intense and herbal; the bitterness is pronounced, though balance is maintained when diluted with water. According to the producer, when sugar is slowly dissolved into the absinthe over a slotted spoon, the drink undergoes an opal transformation and stronger, more complex notes emerge. In place of the controlled sweetness of Absente 55, herbal character leads here.
How is it served?
In the traditional ritual, a small amount of Grande Absente is placed in the glass, a sugar cube is set on a slotted spoon over it, and ice-cold water is added drop by drop. It is also suited to serving with absinthe fountains and classic absinthe cocktails. Due to its high alcohol content, it should not be drunk neat.
What food does it pair with?
Diluted with water, it can accompany cold mezze platters as with other anise-based drinks. Its herbal and mint notes also pair well with bitter chocolate desserts.
