Sublime Absente 89 is the strongest member of the Absente range from Distilleries et Domaines de Provence, a French absinthe at 89% ABV. The Forcalquier facility is the successor to the Distillerie de Lure, founded in 1898; it was taken over by Alain Robert and his team in 1974 and given its current name. To stay closer to traditional recipes, Sublime Absente is made with less sugar than the other products in the range.
What does Sublime Absente 89 taste like?
The recipe is based on armoise (Artemisia vulgaris), grande wormwood (Artemisia absinthium), green anise, star anise, lemon balm and mint. Because little sugar is used, a strong herbal character emerges: on the nose, bittersweet wormwood is pronounced, accompanied by mint, anise and warm spice notes. Seller descriptions highlight balance, strength and aromatic persistence.
How is it served?
A spirit of this strength should never be drunk neat. To open the aromas, ice-cold water is added slowly over the small amount of absinthe in the glass; a sugar cube on a slotted spoon can also be used if desired. As water is added, the drink turns cloudy and takes on an opal colour. It is also used in very small measures to add aroma to cocktails.
What food does it pair with?
Diluted with water, it can be served with cold mezze in a manner similar to anise-based drinks. The mint and wormwood notes also create an interesting contrast with bitter chocolate desserts.
