Efe Rakı Yaş Üzüm is a 45% ABV Turkish raki from İzmir-based Efe Alkollü İçecekler, made entirely from suma obtained from fresh grapes. While traditional raki production long relied mainly on dried grapes, Efe is credited as the first producer to make its raki solely from fresh-grape suma; Wikipedia also records the brand as the pioneer of fresh-grape raki.
In fresh-grape raki, suma is obtained by distilling grapes that have not been dried after harvest. This approach is favoured by those seeking a fresher, fruitier character compared with rakis made from dried grapes. Efe Yaş Üzüm won a double gold medal at the 2010 San Francisco World Spirits Competition.
The ideal serving temperature is 8–10 °C. Raki is poured first into a narrow-waisted glass, followed by cold water; it turns milky white once water is added. Those who want ice can add it last. Those who prefer drinking it neat can keep a separate glass of cold water alongside.
The elements of a classic raki table suit it too: white cheese and melon, olive-oil herbs, yoghurt-based mezes, and grilled or steamed fish. Its fresh character comes into its own at light tables built around seafood.
