Umiki Ocean Fused Whisky

Umiki is a 46% ABV blended whisky assembled in Japan. It combines malt whiskies distilled along the Japanese coast with imported grain whiskey; it is diluted with desalinated ocean water and receives a final maturation in Japanese pine casks. The brand markets it under the phrase "Ocean Fused".

What makes Umiki different?

Its name and character are tied to the sea: as the blend is brought down to bottling strength, it is diluted with desalinated ocean water. Casks made from Japanese pine are used for the final maturation; these casks leave unusual notes of mint, pine resin and cinnamon on the palate. The whisky is marketed by Yoshino Spirits and has won awards at many international competitions.

What does Umiki taste like?

It is golden in colour. The nose shows malty, grainy honey, sandalwood and light dry hay. The palate keeps its malty, honeyed base; mint, pine resin and cinnamon notes from the pine cask become more pronounced. The finish returns to the sandalwood of the nose and closes with a dry woodiness that lingers for a while.

How should it be served, and what food does it pair with?

It can be enjoyed neat, with a single ice cube, or as a highball with soda. Its sea-fresh, breezy character pairs well with sushi, fish and seafood, and light meze.
